Description

The ultrastructure of the surface of ripened kaki fruits cultivar Fuyu, was examined by scanning electron microscopy. On the waxy surface of normal fruits colored to orange red, many this wax-leaflets and cracks reaching to epidermal or subepidermal cells were observed. In the fruit surface with figures like tortoise-shell which are often seen in dry summer, the shallow cracks patterned with a regular ellipse-shape of 70-100 μ in longituidinal length were formed in cuticular layer. In local dark spots formed in a dotted line on the fruit surface, many deep cracks reaching to epidermal or subepidermal cells and dark spots in cuticular layer were observed. In darkly-colored area whose boundary line is not clear, deep cracks, wavy and darkly-stained cuticle were recognized. The formation of the deep cracks in cuticular layer could be the primary cause of the darkly colored spots formed on the surface of kaki fruits.

カキ富有種の成熟果の果面の微細構造を走査型電子顕微鏡で観察した. 朱橙色に着色して, 果粉で覆われて, 外見上傷害のない正常な果面にはうすいキクの葉状の果粉とクチクラ層, 表皮細胞または亜表皮細胞にまで達したき裂が多くみられた. 夏季に乾燥した年によくみられる小さい亀の甲模様の果面はクチクラ層に長径70-100μの楕円形の規則制のある浅いひび割れがみられた. 果皮の局部が破線状に黒変した果面は多数の表皮細胞または亜表皮細胞に達した深いき裂とクチクラの黒変した斑点がみられた. 果皮の黒変部の境界が不鮮明な果面は深いき裂とクチクラのうねりおよび黒変した斑点がみられた. 果皮の部分的な黒変はクチクラの深いき裂が一時的原因であろう.
