Description

In the germinating soybean seeds, the activities of α-mannosidase, β-mannosidase and α-galactosidase and the amount and composition of the water soluble polysaccharides were investigated simultaneously. The activity of α-mannosidase was fairly high in ungerminated beans and increased by germination. The highest activity was observed 3 days after germination as well as that of the α-galactosidase. The β-mannosidase activity was highest in ungerminated beans and decreased gradually by germination. GLC examination of component sugars of the polysaccharides showed that arabinose, xylose and glucose were always detected during period studied but mannose and galactose which were found in large amount during initial germination, were little or not detected in germinated beans at late stage.

大豆発芽時におけるα-マンノシダーゼ, β-マンノシダーゼおよびα-ガラクトシダーゼ活性とそのときの水溶性多糖類について調べた. α-マンノシダーゼ活性は発芽前でも相当量認められ, 発芽によって増加し, そのピークはα-ガラクトシダーゼ活性同様発芽3日日にあった. β-マンノシダーゼ活性は発芽前が最も高く, 発芽によって徐々に減少した. GLCによって, 水溶性多糖類の構成単糖としでアラピノース, キシロース, グルコース, マンノース, ガラクトースを検出した. この構成糖としてのマンノースとガラクトースは, 発芽初期に多量にみられるが発芽後期ではほとんどみられなかった.
